From Our Kitchen: Grilled Shrimp w/ Cilantro & Lime

Entering Fall doesn’t mean you have to put away the grill just yet. This grilled shrimp is delicious and gives off a Vietnamese vibe that’s delicious yet refreshing. Perfect for a Fall BBQ celebrations!
Too delicious for words.
You’ll need:
2 limes
2 tsp ~ fish sauce
1/2 tsp ~ sugar
1 lb (around 15) ~ jumbo shrimps, shell on
2 tsp ~ safflower oil
1 1/2 cups ~ freshly chopped cilantro
1/2 cup ~ salted peanuts, coarsely chopped
2 scallions ~ finely chopped
coarse salt and freshly ground black pepper

(serves 2)
 
Instructions:
  • Zest lime into a bowl, squeeze in juice, and whisk in fish sauce and sugar.
  • Preheat grill to high. Brush shrimp with oil on both sides, and lightly season with salt and pepper. Grill until pink and firm to touch, 2 to 3 minutes per side.
  • Toss shrimp with fish sauce mixture, cilantro, peanuts, and scallions. Juice remaining lime over shrimp.
 

That’s it! Three easy steps for a delicious entree or addition to any BBQ. On its own or over rice, this recipe will please all. Feel free to leave out peanuts if allergic or add finely chopped garlic for an added kick!
